You can use any GTX 500~900 for Windows 2000, just you need the unofficial Nvidia driver. I know it's silly overpowered :) Last thing you would require the extended kernel (ExKernel) for Windows 2000 from BlackwingCat Japanese author. The ExKernel extends to 32GB RAM and beyond capacity. Last require NT patch that allows you to get work modern applications, pre-Windows Vista applications.
