ОтветитьCilantro is a fantastic ingredient. I used to do the same thing and pick the leaves. However, after working in a few kitchens, I've learned a helpful tip. Well, two. Firstly, the stems are highly nutrient rich, try not to waste them.
Secondly, if you grab the whole bunch of cilantro from the tops and fold them up a few times, then take a sharp knife and start dicing &rolling the bunch as you cut. Dicing finely is the key. Promise you won't even notice stem pieces.
Just wanted to share.
Waste not, want not. Or however that goes.
