Fresh-cut fries cook best in the T-fal Actifry, and it's hard to mess it up, in my experience. I use a Cosori for air-frying almost everything else.

ОтветитьBuy frozen -> soak for a couple minutes (inside needs to stay frozen) -> drain -> shake with salt and oil -> dry and defrost on low heat in the air fryer -> turn up the heat and crisp them up -> when there are a few minutes left i put a cup with butter, rosemary, sage and salt into the air fryer -> mix the herb butter into the fries and serve

ОтветитьI'm a 💯% follower of Heston's technique that I learned many years ago from "In Search of Perfection". As far as I'm concerned every technique for good fries are based on his method. It just needs to be adjusted for air fryer. I've done stage 1 and 2 and frozen them for convenience.

ОтветитьAir fryers are about making your life easier. Some of your methods are such a hassle that it would be preferable to deepfry and clean all the mess afterwards. Experimentation is good, anyway.

On what planet is some elaborate 6 hour long procedure with multiple stages to make a small plate of fries more convenient that just heating up some oil on the stove and making a batch of way better fries by just deep frying them like a human being with dignity? Literally the only point of an air fryer is that you want something that's better than an oven fry but more convenient than deep frying.

Yukon gold, soak in cold h2o 10 min or so. Soak in warm as pot heats up. Add potatoes as water just barely starts to boil. par boil with salt and tbs baking soda (super important). Water should barely boil or less. Dry on rack. Freeze fries.
Airfry 390 for 10 to 15 min..
400 for last 5 to 10 min.
While airfrying spray lightly with non aresol avacado oil several times. Super crispy outside, fluffy creamy inside.. perfect. 10 out of 10. I don't know if I can recreate the results but im trying again today..
2 HOUR PROCESS TO MAKE AND HANDLE FULL OF FRIES no thanks. ill just buy the bag that was parboiled already and i don't have to worry about rioting potatoes in my kitchen
ОтветитьA half-heston is what i do. Boil them, but fry them once instead of twice. Less crispy yes, but it tastes so much more creamy.

Ответитьthere is a really good way using a normal oven as well.
preheat oven to 450, cut peeled russet potato's into half inch fries, boil water with couple pinches of salt and a tiny pinch of baking powder for about 8 minutes,
pour fries into strainer.
place on baking tray with space between the fries and cover in generous amount of olive oil.
put the tray into oven for 20 minutes and then flip the fries over.
bake for another 20 minutes or until desired crispiness.
put the fries into a paper towel lined bowl to drain excess oil and IMMEDIATELY cover them with your salt and desired spices.
if you wait on the last step the spices will have trouble sticking to the fries. you could also pre-season the fries before putting them into the oven but i like it this way because its simpler and less messy.
Ore Ida frozen fries are good and a lot less hassle in the air fryer. I like the Fast Food and Crinkle Cut varieties. Both come out nice and crispy on the outside and soft on the inside.

On BBC Master Cooks, the cook that does pan fried tomatoes cooks them in backing powder waterand handles them roughly.this will damage the clean cut surface and thus produce more crunch. I think that is your mistake on the Heston. Cook them only 5 minutes and then handle them rough in the cooked form, to roughen the edges, then fry them. It is the best result we get.
The whole point of air fryer is "quick and simple". No way im spending 2h making some damn fries when i can do it in 30 with similar results
ОтветитьI was interested, until you started using avocado oil. Stuff is poisonous to me. It's not an allergy either as I don't share an allergy to a list of things that are associated with it and doctors have tested for that.
By the way, you should try brining your fries.

To prevent the potatoes from disintegrating, add a little vinegar to the water to prevent them from disintegrating.
Other than #1 ~ What a hassle ~ Don't get me wrong the others sound great but who has the time to wait to go through all those steps ~ Really ~ If you had kids and a gun the mayhem it would cause would drive kids to use it (Just kidding) my dog would drool a pool of water in my kitchen that would cause me to call 911 ~ Thanks for your experiment ~ I learned a lot ~ Buy frozen fries and put them in your toaster oven or go to McDonald's ~

ОтветитьYou were supposed to use vinegar instead of baking soda. Vinegar won’t make them soggy it makes them flexible and in tack.
