I love kebabs. Just about any beef, chicken, pork, lamb pieces or ground on a stick.
I even bought the extra wide skewers.
I have given up trying to do ground meats, because the last two times, the meat fell off the skewer into the coals. Boo.
Any secrets you are withholding to get a perfect ground shish kebab to not falling off?
I miss going to Beirut and eating their wonderful food...back in the '70's, when we flew in from Tripoli to renew our visas on a monthly basis.

wait.. where is the cumin? It looks delicious and I have no complaints, but the onion and red onion should've gotten a thinner dice. The moment you take them out of the bowl after mixing, have a rounder blade and go to town. It should be between minced meat and farce, e.g. finer than what is presented here. Anyway! It looks super delicious! Yet another tasty video from the test kitchen!

This one is actually Urfa Kebap. You can also try the recipe of Adana Kebap. That one is more spicy but taste is more better. In addition you can also serve them with sumac onion or grilled onion.

You never chop up cooked kabob meat, otherwise, throw all the meat in a pan and fry till brown.
