Welcome to my Pineapple Upside Down Cake recipe video! In this video, I'll show you how to make a delicious and moist cake that's perfect for any occasion. With just a few simple ingredients and easy-to-follow steps, you'll have a stunning dessert that will impress your family and friends.

Preheat the oven to 180C/160C fan/gas 4.

Ingredients:

For the topping
100g softened butter
100g light soft
7 pineapple rings in syrup, drained and syrup reserve
7 Morello Glacé Cherries

For the Cake:

150g Softened Butter
150g Golden Caster Sugar
150g Self raising flour
1tsp Baking Powder
1 tsp Vanilla Extract
2 Eggs beaten

Instructions:

To begin, preheat your oven to 180C/160C fan/gas 4. For the topping, you'll need 100g of softened butter, 100g of light soft brown sugar, 7 pineapple rings in syrup (drained and syrup reserved), and 7 Morello Glacé Cherries.

To make the topping, beat the softened butter and light soft brown sugar together until creamy. Spread the mixture over the base and a quarter of the way up the sides of a 23cm round cake tin. Then arrange 7 pineapple rings on top (reserving the syrup for later) and place 7 glacé cherries in the centres of the rings.

For the cake, you'll need 150g of softened butter, 150g of golden caster sugar, 150g of self-raising flour, 1 tsp of baking powder, 1 tsp of vanilla extract, and 2 beaten eggs.

To make the cake batter, cream together the softened butter and golden caster sugar with the beaten eggs. Once creamed, add 1 tsp of baking powder and gradually add 150g of self-raising flour, 1 tsp of vanilla extract, and 2 tbsp of the reserved pineapple syrup. Mix everything together until well combined.

Carefully pour the batter over the pineapple rings and make sure it's evenly levelled out. Bake in the oven for 40 minutes to 1 hour, or until the cake is golden brown and a skewer inserted into the centre comes out clean.

Once baked, turn the cake out onto a plate or cake board. Serve warm with a dollop of whipped cream or vanilla ice cream.
