What if Luke had joined the Imperial Academy, as he said he wanted to do in A New Hope? Say, his aunt and uncle weren't killed by the storm troopers, the catalyst for Luke joining the rebellion.

This is the best what if Star Wars video I have ever seen.

I totally agree that Vader was too easily destroyed by Luke. The whole story arc was flawed. Not to mention that The Emperor would have immediately sensed Vaders betrayal in the Throne room, time enough to turn on the once loyal enforcer.

What if Owen Lars was secretly coordinating with the Rebel Alliance to keep Luke safe, recover the droids, etc... And also put up a fight when the Empire came knocking?

Not really an alternate timeline, so much as an alternate point of view.

What if some company purchased Lucasfilm and decided to destroy Star Wars by ruining all the true heroes, replacing them with the bestest evar non trained but perfect female Jedi? What if they had Luke become a total wuss ass that drinks green milk on an island all by himself? What if they turned Obi-Wan into a loser? Oh…wait Disney did all of that. Hmm what do you know.

Woah woah woah, hold the phone. They evacuated the bulk of an entire planet in under an hour? You'd have to have an especially massive fleet of purpose-built people haulers ready to go for just such an event to even think about pulling something like that off. You'd be hard pressed just to get the news out in that kind of timeframe, let alone physically transported to the nearest spaceport, boarded, and gone.

Just how many people are living there, anyway? Wookipedia says 2 billion. A rough estimate for the internal volume of a star destroyer is 75 million cubic meters. If people are frozen as they board and stacked like cordage, allowing for volume needed for things like engines, you are still looking at maybe 40 such ships to hold the entire population. Granted, an ISD is a warship, while bulk freighters are likely to be larger and even more numerous, with just that sort of elbow room inside. But still, the only sci-fi examples I've seen of such a rapid evacuation typically involved copious use of bulk teleportation.

Idea: What if, during AotC, while captured on Geonosis, Obi-Wan decided to join Dooku with the explicit purpose of ending the conflict and defeating the Sith? Key words, since most of the time when people do this they inevitably turn Obi-Wan into an extremely OOC Sith Lord that makes Sidious look like a kitten.

I guess DNA and genetic testing wasn't a big thing when George Lucas wrote these films.
A quick DNA test and searching for family relations in the database... 😅
