I have seen the damage from mice and rats having lived in the country. That damage is from a rat with big teeth, mice would never chew so big with their little teeth. You will have to sterilise all that area and maybe catch the bugger.

Recommend a Hypochlorous base product to safely decontaminate the rodent droppings and urine. Also wear gloves and N95 class mask.
