The one thing I’m looking at…. If the government bought milk at direct prices and didn’t want to crash the economy… why not make high end aged cheese? Take all new milk and divide it into instant cheese (sold same year) 1 year cheese, 5 year cheese, and 10 year cheese. The overflow would be gradually released back to markets, the government would run a profit, and the milk industry would be safe.
