Wonderful dishes. Just a Correction, Lomo Saltado is not a Fusion with the chinese cuisine. Is a traditional Limeño plate from Century XIX, its similar to other plates like "Chorrillana" and "Lomito de vaca", indeed Lomo saltado are a derivated of them.

La comida peruana de siempre se degusta acompañado de melodias de musica criolla peruana y que unia a la familia altededor de la mesa familiar del dia......provecho.

12 dolares ese pokito d cebiche ?? es una metida d rata .. la estan cogoteando solo porque es extranjera ,, estos coneros color etnocaserismo ponen sus precios altos porq alkilan en zonas exclusivas,,

salteado = cocinar la carne,, sin dejarlo medio crudo estafando a lo clientes

So more information about the aji de gallina since I make it. The sauce contains pecans (for an earthy sweetness), red onion, garlic, some chicken broth, a dash of cumin, aji amarillo (without the spicy seeds, just for flavor), parmesan, evaporated milk, and SALT haha. People that know how it make it, know how to make it. Its all about nailing the proportions. (Also gallina is pronounced ga-yee-na). I hope the helps!:)
