400 g tomato peel and seed purée
150 g linseed
100 g water
70 g capers
2 tablespoons dried oregano
First soak the flaxseed in water. The flax will then release gelatine, which will help knead the mixture for our galette. Next, add the tomato paste and capers to the wet flaxseed and quickly blend everything together, without overdoing it, the peel and capers should still be easily visible. Then add the dried ground oregano.
Spread the mixture on the atacama® shelves lined with non-stick sheets.
Leave to dry for about twenty hours on the ECO programme (a6).
When well dried, the galettes will be crisp and fragrant and ready to be broken into the desired size.
