How much do you play with yeast when either coming up with recipes and such?

One thing I have found (after it was recommended by another brewer) was that one of the best yeast to use for Acerglyns is QA23. QA23 is really good at reatining terpens (found in wood products = maple syrup) and maple syrup has over 300 terpens which make up the flavor of maple syrup. But that is not to say that other yeast can't be used if looking for certain flavor profiles. Great video though.

Very helpful. Is there any advantage to using the glass carboy over the bucket for primary fermentation? The bucket method seems easier for pouring in the honey and wouldnt have worry so much about foam entering the airlock during fermentation. Thanks.
