Chicken rigatoni with creamy tomato sauce
Ingredients
1 lb rigatoni or pasta of choice
1 chicken breast cut into thin slices
4 tbsp tomato paste
3 cloves freshly minced garlic
1/2 white onion, diced
Basil leaves, for garnish
1 cup heavy whipping cream
1/2 cup Parmesan cheese
1/2 cup mozzarella cheese
1 cup pasta water
Salt and pepper to taste
1 tbsp red chili flakes
2 tbsp butter
Instructions:
Cook rigatoni in boiling salted water. Set pasta aside. Save 1 cup pasta water
Saute onions in butter . When onions are soft and translucent, add garlic and cook for a minute or two. Add tomato paste. Season with salt, pepper and red chili flakes. Cook 1 minute but do not let the garlic burn.
Add cream and stir until combined. Continue simmering over medium heat until slightly thickened. Add Parmesan cheese. Toss in cooked pasta to finished sauce in pan, and stir in just enough pasta water so that the sauce comes together.
Add mozzarella cheese and mix well.
Grill the chicken with your favorite seasoning and serve with the warm pasta.
Garnish with fresh basil and more parmesan cheese.
