The problem with your first model is the main hidden problem most noobs have with blender - you had vertices that duplicated and directly on top of the vertices that originated them. Also, happens with faces. You have to merge all verticies by a very small distance to get rid of this. It also helps to have your model "smart unwrapped" in the UVs tab, and to make sure you've done the "recalculate outside" all your normals. Basically this plus the (alt A, or alt T, or whatever it is to apply all your transforms) basically normalizes your model so it can be properly understood by outside programs.... your model is just a bunch of vectors posing as graphics by the way.

Elliot mate it's INSANE how you and I both went on this EXACT same journey. I mean almost identical, except I was learning blender and unity to make a VRChat avatar. So kind of the same but not really. But I also had to get the CATS plugin, and also had the Blender version problem. I think VRChat avatar creation might be a pretty good way to practice these skills for you if you'd ever want to... jump down that rabbithole.
