Based on my experience, you only need to marinate the meat once at the beginning (not halfway through the roasting), as for the crispy skin, the key is to make sure the skill really dry before roasting. So all you need is to poke many holes on the skin and apply salt (best if you apply salt 3-4 rounds). Then guaranteed you can crispy roast pork.
The whole process may take 4-5 hours, but the actual hands on work take less than 1 hour. The rest of the time basically about waiting for marinating, letting the skin dry and roasting
