People on here who are stuck in traditional ways should evolve and think outside the box. Give it a chance before you condemn just because of a spoon of sugar. It isn’t even sweet but more like balances out the flavors.
Trust me when I say there is much more to a “CAKE” than a spoon of sugar in cornmeal or cornBREAD. I can’t phantom the thought of how this could possibly be a CAKE just because a spoon of sugar is added. Ridiculous. Everyone wanting to talk about how Grandma makes it but if only grandma had all the luxuries of today and tried this with all the new world developed recipes, I would think she would approve. Growth mindset y’all.
With that said, to each their own and I agree with the person who said NOT A SINGLE ONE of your recipes John has been a failure for me either. I receive endless praises for all of them and it has made me feel so proud. Thank you for all that you do and share. Keep it coming. 🫶🏻

ОтветитьSpicy cornbread is my favourite add some peppers, diced tomatoes and jalapeños and it's delicious! A more savory cornbread is what I prefer and with a good punch it makes for a beautiful side to anything too creamy like say creamy mushroom pasta or a juicy burger 😊
ОтветитьMy mother was a self-described Tennessee hillbilly. She always said that the further north you go, the sweeter the cornbread gets. Her recipe (which I use) didn't have sugar in it. She also used buttermilk instead of whole milk, and bacon grease added to the batter and also to coat the cast iron skillet. I don't doubt that your recipe produces a delicious result. But I don't think my mom would approve. 😉

ОтветитьFor those who, like me, kept rewinding to get the quantities right:
Combine dry ingredients: 1 1/2 C Corn Meal (255 g), 3/4 C Flour (90 g), 1/4 C sugar (30 g), 2 t Salt (12 g), 2 t Baking powder.
Wisk together the wet ingredients: 1 1/2 c warm milk (360 ml), 1/4 c melted butter (56g), 1 egg - room temp..
Combine and gently stir together.
Following along step by step RIGHT NOW with my FAV. Preppy! Can not wait to POP OUT of the oven. As with all your D-Lish dishes, I emulated they are screaming A+Mazing!!!

ОтветитьIs the 255g of cornmeal correct for 1.5 cups? The weight on the bag of cornmeal shows 30g per 1/4 cup or 180g for 1.5 cups seems like a big miss?

ОтветитьHello, apologies in advance if this is a dumb question, but if you end up using a baking pan, do you still do the same process with the oil warming up in the oven as you did with the skillet? It was mentioned that a baking pan could be used as well, but it wasn't made clear if the warming of the oil step remains the same, or if you skip that step and just pour the mixture in the pan (maybe a buttered pan?)

I am not familiar with corn bread and I just made it following the directions but the bread is very dry and not tasty at all. Is that the way it’s supposed to be?

ОтветитьTried this recipe and it turned out pretty good. A tad bit on the salty side, so next time I'll add maybe 1tsp -or 1 and a half teaspoons.

ОтветитьI make old fashioned yellow meal cornbread and fry small cakes of it in an old iron skillet that my grandmother owned. No sugar though.
