How to make Oshi sushi

Description:

Learn how to make Oshi Sushi with this tasty recipe from Yutaka! Oshi Sushi, also known as “pressed sushi” is a type of sushi which is made by pressing blocks of rice in a special mould.

Our presenter Akemi Yokoyama is a Japanese cooking instructor teaching both beginner and advanced cooking courses in Japanese cuisine.

This recipe makes 2 pieces of sushi, serving 2

Ingredients:
•About 200g Sushi rice, depending on the size and depth of the ring
•6 tbsp fresh white crab meat
•4 tbsp Yutaka Shelled Frozen Edamame (if Yutaka Edamame Soybeans with Pod is used, you need 10-15 pods. Take the beans out)
•Yutaka Wasabi
•Crushed edamame soybeans
•1 tbsp salmon roe
•Yutaka organic tamari soy sauce

You Need:

A 6-7cm food ring and a matching pusher or a flat bottomed glass with a diameter bigger than the ring, a bowl of water and a dampened towel.

Directions:
1.Chop edamame beans finely by knife or crush lightly in the food processer.

2.Dampen the ring and the pusher to prevent the rice from sticking.

3.Wet your hands to prevent the rice from sticking. Pat on the dampened towel to remove excess water.

4.Place a food ring on a clean chopping board. make a shallow layer of the sushi rice at the bottom. Use the pusher to press down the sushi rice.

5.Spread half edamame to make a shallow layer on top. Press again with the pusher. Wash the pusher by dipping in the water as necessary.

6.Make sure your hand is slightly wet. Add another shallow layer of the sushi rice on top. At this stage, you should have about 0.5cm space at the top.

7.Spread half the crab meat at the top evenly. Press with the pusher to compact the ingredients.

8.While lightly pressing with the pusher in one hand, lift the ring with another hand.

9.Serve with half of the salmon roe in the centre with sprinkles of soy sauce

10.Repeat the process for another sushi.

Note:
If you use a flat bottomed glass to press, make sure that the ingredients are slightly overflowing from the top line of the ring, so you can press to compact the sushi.
