I would recommend using a well marbeled chuck steak or roast and for extra pop, add some neck bones, the added collagen and fats kicks it up a notch.

The onions and cilantro need to go inside the taco then you put the sauce on top.

I'd recommend dipping the tortillas into the consomme prior to putting them on your heat source. Cilantro, onion and a little lime squeeze on each one goes a long way too!
