Actually, placing your iron farms so high might give you some trouble since I've seen instances where golems just don't spawn.

All you need is to build it like 8-10 blocks up and not have any interfering blocks, villagers in a 3x3 chunk area around the village center(chunk with a bed and a workstation block)

As long as you have one Farmer Villager in the breeder, you're good to go - I find that having a Nitwit is better than two villagers that can work - as they could interefer with each other if you've traded with them. Enjoyed the video nonetheless.
