You're the first young person I've seen give a good & thorough mac and cheese tutorial. This looks amazing. I think if you turn the burner off while adding your cheeses to the mornay sauce you might see less of the brown bits at the bottom of the pot.

I made this once and it came out perfect, but I’ve attempted it 3 more times and as soon as I add the heavy cream it separates 😩 I don’t know what I’m doing wrong, someone please help!

Unnecessary chicken stock, 3x the amount of butter than is necessary and heavy cream instead of milk. What you have made is fatty goo that will only taste like cream and butter, and I highly doubt that you will be able to taste the cheese at all. Next.
