Does not the brisket start to go bad after 5-7 days? I never heard of raw meat being stored in the fridge for longer.

cooks with an internal temperature of 180f in about 2.5 hrs, but it’s tough a
bit, not tender. Should I cook it at a
lower temperature for longer?
Fat has all the flavor.
