Cutting paper proves NOTHING.
You can even cut paper after a 220 grit stone and properly deburred edge.
Try a hanging hair test ;)

Lol a 19 is a razor, but a 96 is a very sharp chef knife????

You would need a much more acute angle on the blade to come anywhere near the sharpness of a razer. Not to mention a razors edge is also much less jagged than a knife.

I find that if I go back and forth to start the edge, then move into single strokes, the knife comes out sharper

Sharp is not about a brand. Its about type of steel, angle and the skill of the person sharpening it. You can sharpen cheap steel to a razor's edge it just won't hold for very long.

I just bought the Tumbler but I STILL don't know how long or how many strokes I should Hone for exactly. I sharpened for 5 minutes. (according to the instructions)

The razor test could be a bit scuffed because he held it in his hand and pressed down instead of securing it in the clamp because it was too small. The shaky hand could have created a slight sawing motion that made it cut the wire more easily. In a sharpness test the cutting edge is secured and lowered carefully to prevent a sawing motion.

Funny enough I after alot of research and despeately needing to stop using the cheapo plastic 3 blade razors I got a merkur 38-c and japanese feather razor blades, I picked the feather brand because they are made in japan and feather is a scalpel company they are known for making the sharpest razors commercially available

Unfutunately the sharper the blade the quicker it dulls do to the fineness of the edge 😢
Even being careful cutting some veggies and meat I bet you lose quite a bit on this scale. Still sharp and servicable for.many uses clearly its a knife but we're talking is it still a razor edge.
