Ingredients:

First step:
½ cup - Hot sauce
½ tsp - Paprika pwd
2 tbsp - Chilli garlic sauce
1 tsp - Red chilli pwd
1 to 2 pinch - food colour
1 kg - Chicken with skin
Mix all the ingredients for the marinade in a saucer bowl and whisk well
Inject the chicken in several places so that the sauce goes inside the flesh, and it'll taste tasty
covered and let sit for 4 hours in the refrigerator.

For coating: (2nd step)
2 cups - All purpose flour
½ tsp - Chinese salt
1 tsp - Salt
1 tsp - Black pepper pwd
2 tsp - Red chilli pwd
2 tbsp - Onion pwd
1 tbsp - Baking pwd

For chicken marination: (3rd step)
1 tbsp - Ginger garlic paste
1 tsp - Black pepper pwd
1 tsp - Salt
2 tsp - Paprika pwd
½ tsp - Chinese salt
2 tbsp - Chilli garlic pwd
1 tsp - Cinnamon pwd (dalchini pwd)
1 ½ tbsp - White vinegar
Add the chicken to a bowl and season with the sauce.
Cover and set aside for 6 to 8 hours or overnight in the refrigerator.

Wet batter: (4th step)
½ cup - All purpose flour
½ cup - Corn flour
½ tsp - Black pepper pwd
½ tsp - Salt
½ tsp - Cinnamon pwd
1 tsp - Red chilli pwd
1 tsp - Baking pwd
1 tsp - Ginger garlic pwd
1 - Egg
1 tsp - Kashmiri chilli pwd
Buttermilk
½ cup - Water (Do not add all to one, add a quarter cup first and if consistency right then, you don't need to add more quarter cup of water)

Al baik Garlic sauce: (5th step)
10 - garlic
½ cup - Milk
1 ½ cup - Cooking oil
¼ tsp - Salt
1 ½ tsp - Lemon juice

Procedure of coating:
Let the chicken drop to room temperature before you start.
Add two pieces at a time in a box, shake well that will give you a good uniform covering.
Take out chicken from the Flour mixture, and dip the chicken pieces one by one into the egg batter.
Dredge the wet chicken in the flour mixture, shaking off any excess flour.

For frying:
Heat oil for frying and be sure to heat to 325F to medium-high.
Gently pour the breaded chicken in the warm oil.
Fry until golden and fully cooked – about 8-10 minutes.
Repeat with remaining portions of chicken.
Have a Chicken Al Baik!
