ОтветитьI've been enjoying this recipe for a few years & just now watched the video.
I use it to spread on cheesecake, put a bead of it on blueberry coffeecake batter in the tube pan for a nice surprise center, and it's delicious in a cup of plain Greek yogurt.
Your lemon cookies were a big hit with my sister on her birthday!
If you've never tried Sicilian whole lemon cake, I recommend looking up a recipe.

Wet ingredients:
* 1 cup whole milk
* 2 tablespoons zest (two medium lemons)
- Put in milk
* 3 room temp large eggs
* Table spoon vanilla estract
* 1/4 cup Lemon juice (2 lemons)
- Whisk one more time
- Set aside
- Grab scale
Dry Ingredients:
- Grab a large bowl
* 2 1/2 cup (300 grams) all purpose flour
* 1 1/2 cup ( grams) granulated sugar
* 2 teaspoons baking powder
* 1/2 teaspoon salt
* 1/2 teaspoon cardamom (optional)
- Whisk
* 1 1/2 (3/4 cup) sticks SOFTENED butter
- Mix with hand mixer
- Add butter 1 tablespoons at a time
- Mix until you get a damp sandy mixture with no clumps of butter
- Prep cup cake pans and add liners
Combine wet and dry ingredients:
- Add half of wet to dry
- Mix with hand mixer (will look chunky bc of curtled milk from lemon juice)
- Mix for 30 seconds (looks like wet cookie dough)
- Scrape bowl down
- Add rest of wet ingredients
- After initial mix, increase to medium speed
- Add mix 1/3 cup to pans
- Bake 18-20 minutes
- 350 degrees
- When room temp, frost
Cream Cheese Frosting:
* 1 cup softened butter
* 1 tablespoon lemon zest
* 8 ounce cream cheese
- Mix for 2 minutes at medium power in stand mixer
- Reduce mixer to low and add sugar 1 cup at a time
* 7 cups of confectioners sugar (may be less)
* 2 tablespoons of lemon (UP TO 1 lemon)
* 1/2 teaspoon vanilla extract
- Before using mix for 30 seconds before serving
Lemon Curd:
- Pulse sugar with lemon zest with food processor
* 1 cup granulated sugar
* 2 tablespoons Zest 2 lemons
- Pulse and shake the food processor
- Set aside
* Strain 1/2 (100 mL) cup lemon juice
- Grab a heavy pot with a thick wall
* 6 egg yolks add to pot
- Whisk
- Add lemon sugar
- Whisk like crazy until it lightens in color
- Then add lemon juice
- Mix and continually whisk with french whisk on low heat
- Once curd thickens and slowly thickens remove from heat
* Add 1/2 cup COLD butter cut in tablespoon size pieces
- Whisk together
- Put in bowl or mason jar to chill for a while

ОтветитьMade a killer bushe Noel, one year (because we were in Florida) instead of chocolate I made it with lemon curd and white buttercream frosting, and fresh berries outside to decorate big hit.
ОтветитьDon't just go get 3 lemons, different lemons have different amounts of juice in them and its the juice you really need to worry about, Start with 3 lemons then add extra lemon juice if your lemonade is Too sweet, always be tasting,once its finished you can't go back and change it
