ОтветитьBecause of the oesophagus and oral cavity could contain matter from the rumen, I like to cut between the mandible and down the neck. I pull the tongue out like a columbian tie and I remove it with the oesophagus and the windpipe, which are connected to the other viscera. I also advice not to cut around the anus at the beginning, because this can potentially contaminate your blade. As you have pulled out the viscera, yoi can cut round the anus from the inside, when all the potentially contaminating stuff is already out of the body.
