And we're back! Spring is here, I have a bunch of videos to edit, and I finally made myself sit down and work on one. 😂

For the return of Edible or Not, we're talking about yellow salsify, Tragopogon dubius. Salsify is one of my favorite early spring plants, and is a wonderful edible species that you probably have in your yard. Fun fact, Tragopogon means goatsbeard which is another common name of salsify and refers to the whispy fibers the flower buds get when they go to seed.
