I've got a weird possible idea for those bars. They might have been there to rest on the operators shoulders, allowing them to sort of aim with their shoulders and torso while also operating the crank. Its a strench but its the only thing i can think of.

False that this is the most robust joint. Simple, yes. Insufficient glue area to be the most robust. Dowelling is attractive, and provides some strength. But far from the most robust.

Why the water at the end?

If you know how deep your hole is why don't you just cut the wood so it's just 0.050 in more than you need then all you need to do is just pair It Off? Or you can leave a feeler gauge on the side and tap it in until you hit the feeler gauge leaving only 0.010 in pretty easy to pair it then. Save a cutting step
