ОтветитьI love yo grill my eggplants! The skin gets scorched and it's really smoky, the oven method doesn't taste smoky, just baked! It's a great side dish or even main dish! Yumm
ОтветитьMade this for the first time today…ooh my! Wow, just wow! So delicious! Takes my appreciation of eggplant to a whole new level!

ОтветитьGreat Curry! Made it today and enjoyed the real indian taste. I added sliced, fried garlic for an even more powerful 'smokey' effect which worked very well!
ОтветитьSo throw away the skins of the eggplants?
ОтветитьYou are doing over acting too much.
ОтветитьProbably taking a risk at getting beat up by indians , but as I don't have a broiler in my oven would it be okay to firstly burn the skin a bit with the gas burner before putting it in the oven for the smokey taste? And to make it more saucy at the end, would adding some coconut Milk be a nice idea?
ОтветитьCould you please tell me on what broil temperature the oven should be and for how long do you broil the eggplant on that temperature?
ОтветитьYou make it look so delicious. I love your technique tips, very helpful. I'm going to make this tomorrow.
ОтветитьWhat if you don’t have ghee, what can you substitute it with? Possibly regular salted butter?
ОтветитьWhy you didn't pronounce it as Baigan baby
