ОтветитьThe crab XiaoLongBao has vinegar with ginger because the crab is cold character and the ginger is hot character, it is used for neutralise the cold of many crab food. If someone has bad stomach or cold body character, they will feel pain of their stomach after having seafood. In Chinese food culture, foods all have their characteristics, one is cold and another is hot. The cooking ways are also diverse due to finding the best way to balance food’s characters, and ensure the good taste at the same time. For example, eating steamed crab is usually with the companion of ginger vinegar and wine, using hot things to balance the cold. The lamb is hot, so we usually using boiling lamb, cold water to balance the hot. If ppl want to east lamb bbq, usually ppl will drink chrysanthemum tea with crystal sugar, using cold balance the hot. If ppl continue to eat lamb in days, they will get nosebleeds, that means too much hot and it increases hot character of the body, unbalanced situation. Another example, RouJiaMo in XiAn, a baked bread with boiled pork in it. Many ppl like it. Pork is cold, we put several kinds of hot seasonings when we boil it, and then the baked bread by fireplace is hot. So we combine these two together. It is a tasty but healthy combination. There are so many examples that I can’t list all. Anyway. Just like Ying and Yang of TaiJi, to keep balance and being healthy, that is our food philosophy.

ОтветитьI guess you miss those small ancient townships such as Lijiang, Dali of Yunan, Shangri-la, Yangshuo, Xishuangbanna, Furong ancient town and Fenghuang ancient town, and Zhangjiajie. These small ancient towns are way more beautiful, great nature, diverse culture.
