Setting the scene, a fertilised chicken egg, known as balut in South East Asia, is boiled and eaten in the shell. The age of the egg before its cooked is a matter of preference but in Vietnam it's about 19-21 days old. The chicken is half formed in the sense that you can tell it has a head and bones, but otherwise it looks like an egg. Just with a chicken in it.
