Ответить4 years later, I hope this guy learned to heat up his brining solution in order to dissolve the seasoning he put in. Use ice to chill it or to add that second batch of water. Your brine solution will provide even better results

ОтветитьIn today’s video, like so many of his other videos, we see Malcolm “Mr. HowtoBBQRight” Reed, being the savage that he is, out on his back porch, just straight doggin’ out one of those juicy, fine lookin’ turkey legs. All the while, the rest of his poor family is sitting there, starving at the table inside, with their plates and utensils at the ready, painfully looking out the window while staring at Malcolm, in complete and utter disbelief, while he is just mere feet away, going to town on that “dinosaur leg” and moaning with pleasure, thus never giving the hungry bystanders another thought. All of that happened even though he more than likely said, “hey guys, let me go pull these turkey legs off the grill and I’ll be right back and we can all feast together on these delicious bad boys” moments before he left out the door on his way to the smoker. 😂😂😂

ОтветитьThank you, appreciating your short video. Remember every one turkeys are on discount after Thanksgiving also. I am smoking thighs, legs and wings today for smoked turkey and rice soup. I smoke turkey to use in place of a ham hock in soup and beans.
Ответитьfor extra crispy skin remove from the wet brine, rinse & dry, then put salt on the skin and back on the fridge for another 12 hrs, wipe the extra salt and to the smoker...

ОтветитьI got 2 big legs in fridge now. I just put salt on them & got them on a rack. Going to smoke them tomorrow. Might try a different seasoning for each. Thanks for the temperature 275° for smoking.
ОтветитьInstead of that "vinegar glaze" can I just spritz some apple cider vinegar while it's still smoking to further maintain the moisture as well as develop a sweet and tangy caramelized meillard effect? I just the find the spritzing more effective in helping me control surface moisture.

ОтветитьI’ve watched a handful of other videos about turkey legs and have decided to use the brine from this one. However, some others suggest to smoke at a lower temp initially and then crank up the heat near the end to crisp up the skin. Anyone know which method is better? I like the idea of going slow at first because the longer it’s cooked at a low temp, the more tender it’ll be, but I also want to make sure to get the skin right.
