ОтветитьThis recipe in bakers percentages is :Flour - 100% (300 grams), Water - 93.6% (281 grams), Oil - 2.3% (7 grams), Sugar 6.6% (20 grams), Salt - 3.2% (9.6 grams), Yeast - 2.3% (7 grams).
The formula I use is: Flour - 100% (409 grams), Water - 50% (204 grams), Salt 1% (4 grams) , Yeast 0.5% (2 grams) Oil - 1% (4 grams). The dough is ready to use in 2-3 hours and is MUCH easier to handle.
I totally remember watching this before a few days ago! I'm thinking it's the one that was unlisted that appeared in the Welcome to MUNCHIES playlist, but now it's been re-uploaded as a listed video.

ОтветитьAnd the manure was used because it’s easier to patch holes with manure than clay. Using clay to patch the eventual cracks from the oven would not work.

ОтветитьPita bread is not Israeli. Israeli is a made up country from a 70 years ago and pita has outdated its existence by thousands of years. Its fair to say that pita is lebanese, syrian, or Palestinian. But its most correct to say that, pita is from Greater Syria or the Levant. Also this pita looks shitty frankly. Pita is a flatbread. This bread has a doughy fluffy interior that although it looks delicious, is in no way what quality pita actually is.

ОтветитьIn the video, Mike combines everything except for the salt in the food processor, spins it for one second, then adds the salt and continues to spin it for 1 full minute. In the recipe, linked above, the instructions say to do something completely different: "Combine the flour, yeast, salt, sugar, 1 cup of the water, and the olive oil in a food processor. Pulse just until a ball forms. With the machine running, stream in the remaining 3 tablespoons water and process for 1 minute." Which is correct? These are pretty different techniques, so I imagine there was some reason that the written version was so different?

ОтветитьUgh, found your perfect recipe and accidentally added 2 tablespoons of salt instead of teaspoons :( and just ran out of flour. Tried to fix it, but lets see. I'll get this right one day I swear!
