ОтветитьWhat is it that you put into the boiling water to make stock ? That's not explained anywhere. Doesn't look like chicken so it can't be chicken stock that you're making. It looks more like garlic or something ?

ОтветитьAnd here it is four years later... and I just did the same thing as Mike. Luckily, no harm done, minute under cold water and while my hand was sore for an hour or so, that was the extent of the damage. Just took a fry pan out of the oven, set it off to the side, went to turn the handle out of my way to work on another pot, sizzle, sizzle.

I agree with the clean-as-you-go though! Definitely should be the only way to go.
I learned a lot from the video, but did he just tell me to dunk my still hot $200 All Clad pan into water to easily wash it? Might be okay for cheap or otherwise disposable cookware, but I do not like cooking with expensive pans that are badly warped from doing this. I cringed a little when he said this and it bothered me enough the next day to come back and comment haha.

ОтветитьIf you clean your pans while they are hot, make sure to use the hottest water your tap will let you. If your not careful you can warp your pans.
ОтветитьTraditional biryani is very different to this version ...spinach is not used and pretty sure curry powder is not used either but I guess this is a western version and a short cut as well. Still looks nice

ОтветитьMike's experience with the hot pan handle reminds me of the episode of 'The Good Life' (aka 'Good Neighbors') in which Tom and Barbara have installed a wood stove in their kitchen. Tom reminds Barbara to always use a pot-holder when taking the cast-iron kettle off the stove, then almost immediately forgets the pot-holder himself.

#1 Read the recipe completely beforehand and group tasks together so they can overlap
#2 Preheat everything: Oven, Pan, boil the water in a kettle if needed
#3 Choose the suitable size of pot for boiling something
#4 Keep your surfaces, especially your cutting board clean by using something where you can drop the waste
#5 cook things with a lit —> cooks faster
#6 consolidate the actions —> need water for the rice, directly prepare the stock while you have the kettle in your hand
#7 don’t weigh out, just guess by using references
#8 clean up as you go
#9 quicken the cooking by adding so cooking water to the vegetables
#10 reuse utensils
#11 you can “butterfly” chicken, because than its thinner and cooks much faster
#12 cheat (if you want to) with the cutting, by grate it when it doesn’t need to be finely diced.
#13 again: clean up as you go :)
#14 pans are cleaned more easily when they are still hot

ОтветитьThe most shocking thing with this video is that it seems that Sorted Food actually have a matching lid for one of their pots or pans. In general they just seem to pop anything on top of a pan or pot to act as a lid.....

This was really helpful. I take way too much time in the kitchen. Thank you. There was one part I had trouble following. Washing the chicken hands in the same container the dishes are washed in. I can't do that, but everything else was very helpful.

ОтветитьThis is what I really need, I make good food, but I'm SLOW, like really slow. I be taking two hours to make a simple pasta dish, simply because I want it to be perfect and get stressed. This really helps though, thank you
