With how much Evan likes peanut butter, you should do the flavor from my favorite ice cream shop: peanut butter, coconut, cayenne pepper. Not too much cayenne pepper, just a little kick of it. It should be spicy enough to feel, but then immediately be quenched by the milk products. Google "Jeni's Bangkok peanut ice cream"

im wondering if the reason the PB icecream was so much better texture wise not only because of the nitrogen ratio being spot on but also the extra fat content in the PB?

Nearly $200 for a tank of liquid nitrogen, only for the ice cream to not mix well, for ingredients to make the mixture more tempermental, and finally to ruin the whole ice cream. No thank you, I'll stick to making real ice cream.

We used to have one called SubZero but sadly the had to close most of their northern Utah locations due to covid and haven't been able to bring them back yet.
