### 🍰 *Strawberry Cake Recipe*
#### *Ingredients:*
*For the cake:*
- 2 ½ cups (300g) all-purpose flour
- 2 ½ tsp baking powder
- ½ tsp salt
- ¾ cup (170g) unsalted butter, room temperature
- 1 ¾ cups (350g) granulated sugar
- 4 large eggs
- 1 tsp vanilla extract
- ½ tsp almond extract (optional, but adds great flavor)
- ⅔ cup (160ml) whole milk
- ½ cup (120ml) strawberry purée (see below)
- Pink or red food coloring (optional)
*For the strawberry purée:*
- 1 ½ cups fresh strawberries, hulled
- 1–2 tbsp sugar (optional, depending on sweetness of berries)
- 1 tsp lemon juice
*For the frosting:*
- 1 cup (230g) unsalted butter, room temperature
- 3–4 cups (360–480g) powdered sugar
- ⅓ cup (80ml) strawberry purée (or jam)
- 1 tsp vanilla extract
- Pinch of salt

#### *Instructions:*
1. *Make the strawberry purée:*
- Blend strawberries, lemon juice, and sugar until smooth. Simmer in a saucepan for 10–15 minutes until thickened and reduced by half. Cool completely before using.
2. *Preheat the oven to 350°F (175°C).*
- Grease and flour two 8-inch round cake pans (or line with parchment).
3. *Make the cake batter:*
- In a bowl, whisk flour, baking powder, and salt.
- In another bowl, beat butter and sugar until light and fluffy (about 3–5 mins).
- Add eggs one at a time, beating well after each. Mix in vanilla and almond extracts.
- Combine milk and cooled strawberry purée.
- Add flour mixture in 3 parts, alternating with milk/purée mixture. Start and end with flour. Mix until just combined. Add food coloring if using.
4. *Bake:*
- Divide batter evenly between pans and smooth tops.
- Bake for 25–30 minutes or until a toothpick comes out clean.
- Let cakes cool in pans for 10 minutes, then transfer to wire racks.
5. *Make the frosting:*
- Beat butter until creamy. Gradually add powdered sugar.
- Mix in vanilla, salt, and strawberry purée. Beat until fluffy. Add more sugar or purée for desired consistency.
6. *Assemble:*
- Once cakes are cool, level tops if needed.
- Spread frosting between layers and on top/sides.
- Decorate with fresh strawberries if desired.
