무와 배추를 네모지게 썰어 절인 다음 파, 마늘, 고춧가루 등의 양념을 넉넉히 넣고 버무려서 익혀 먹는 김치다. 맛김치는 섞박지라고도 불리는데, 이는 무, 배추를 섞어 만든 김치라는 데서 유래한 이름이다. 오래 두고 먹는 저장 김치라기보다는 그때그때 막 담가 먹는 김치라하여 막김치라고도 한다.

Mat-kimchi - Napa Cabbage and Radish Kimchi is made by slicing radishes into one-inch squares, brining them in salt and seasoning them with a generous amount of spring onions, garlic and gochut-garu (red pepper powder).
This dish is also called seokbakji because it is made by mixing radishes and napa cabbage. Instead of being stored for a long time, it is prepared and served as needed.

배추 3kg Napa cabbage
천일염 1컵(cup) Sea salt
물 1L Water
무 1kg Radish
소금 2큰술(table spoon) Salt
쪽파 200g Green onion
홍고추 2 Red pepper
새우젓 3큰술(table spoon) Salted shrimp
마늘 60g Garlic
생강 20g Ginger
까나리액젓 3큰술(table spoon) Fish sauce
매실액 2큰술(table spoon) Plum extrat
고춧가루 3/4컵(cup) Red pepper powder
