You guys sure process the pig different than easter europeans. We use the head and legs to make jelly/aspic. And the skin is also used. Well yeah different people different kitchen.

ОтветитьI am so excited for the both of you to adventure off in processing your own hogs I am going to be more excited when I watch you start to grow your own meat it's a three-phase ordeal meaning there's three ages of hogs that you have to have around all the time when you process one group that means one out of three is being processed you have to replenish it and bring a new set of piglets or hogs in I'm so glad to see you do this this is something I've been doing all of my life and it's very very easy congratulations I respect you and I appreciate what you're doing

ОтветитьI appreciate you saying that bit near the beginning of the video about it being graphic, as well as the part about where you said it's not easy. As someone who doesn't like the idea of hunting because of the killing involved, I do appreciate that.
ОтветитьBeing a country girl I've seen pigs killed and butchered. They were usually de-haired with boiling water so the hams still had the skin. The parts we wanted smoked were sent to a neighbor who had a side business. With careful prep as they say you can use everything but the squeal. Grandma rendered all the fat for either cooking, soap making or food for her chickens.
I agree that everyone should know where their food comes from, whether it's Cheerios or chops. Farmers do not get the respect they deserve for feeding the world. There would be no food in grocery stores without them.
I am 75 years old and we used to kill hogs and used most all the hogs. The heart and liver are really good.we cooked the tongue and the head and the feet. Used the fat and the skin also. The fat for lard and cracklings. Some people used the intestines also.

ОтветитьI’ve butchered my own deer for many many years as an adult but when I was a kid I would help but her cows and pigs and it is by far the most worthwhile knowledge I have ever gained!! It’s so important to see what meat cuts there are and to understand this process!! Too many people just don’t care to understand so many pieces of life and death and all the in between a!! ОтветитьWe raise our own animals on our farm and my son and I slaughter and butcher them ourselves. We raised two feeder pigs and processed them on our farm. Not pretty but got close to 500 pds of pork.

I hope they dewormed the pig, because that’s what they do in the meat industry because they clean it up and processed the pig for the right amount of time to get it ready to eat or put in the store so we can eat it, not just Butcher it and hang it in the skillet there are the meat processing procedures the morning make sure that the meat is possibly processed thoroughly and sterile environment so no bacteria forms! So having it done this way save us from getting any bad bacteria in our meat.

ОтветитьIf you can season the head with mexican seasonings rubbed with evoo and slow roast in the oven for 3 to 4 hours on low. Take it out and fork off the meat. So delectable, eat on a taco. To die for!🥰

ОтветитьGreat job guys! I love the puppy dogs but the liver! OUCH! Pork liver is so good. Fried or smothered with onions and gravy is great. My favorite is boudin! You had everything you need to make it with the exception of rice and green onion. Great video.
