Also, in these United States, most people would call those chips "steak fries," because that's the thickness a lot of steakhouses typically cut them. The thrice-cooking method is a good thought. It's worked for McDonald's for decades.

ОтветитьQuick tip: whenever you're skimming anything off the top of a pot of liquid, fill a bowl part way with water, and dunk your spoon or ladle into the water as you dump whatever you're skimming off into it. The water in the bowl will strip off what you're skimming, so it doesn't cling to the spoon/ladle and go back into the pot, and you don't have to keep going over to the sink.

I dont like/am scared of/etc deep frying.. But bit concerned you only made about 5 at once here.. which is .. well. not realistic if i need to feed family ...

ОтветитьWouldn't call them the world best all depends on the dishbits with fish a chips you want soft chips, they would be ok with steak or a burger.
Also heston isnt really telling the truth the method is done in Chinese have been doing twice an triple cooked chips forever.
Amazing need to try. Have you tried Nigella Lawson chips though. Raw potatoes chopped put into cold oil with garlic and rosemary then turn the heat up until they are cooked. Really really crispy and soft and fluffy in the inside.

ОтветитьI use to make some naughty chips by using 50/50 lard and beef drippings in my old Tefal deep fryer.
I use Vivaldi potatoes from Sainsbury’s, way better than Pipers; especially if you get the ones with (Origins from Israel.)
LOL took me forever to figure out what the gramnut oil you was talking about was ( had to google that and it came up with ground nut oil ) . I do know peanut oil thank goodness . LOL I need to try this .
ОтветитьPro tip for air fryer chips mate. Chip your spuds as normal. Rinse. Pat dry. Cover/spray them in oil. Place in a bowl andddddd. Microwave them for 3/4 minutes. Then cook in the air fryer until golden. Taste like Nannan chips cooked in a chip pan. You’re welcome. 🫶🏻

ОтветитьBarry… my grandad owns an award winning chip shop. You should season them as soon as they come out of the fryer and then let the oil dry and have the (salt) seasoning stick to them

ОтветитьThere's another option for crispy deep-fried potato sticks; cold oil frying, and no it's not like cold-brew coffee or something, it's just simply starting your frying in cold oil, letting the potatoes essentially blanche in the oil as it gently heats up to the full frying temperaature where they get all nice and crispy... :)
ОтветитьFor air frying, try Chris Young (ex development chef for Heston). He’s got an odd but very good method. Tried it the other day and they were fantastic.
