Q: Can I just drain the water to make it cook faster?
A: Yes, you can. But why are you in such a hurry? If you concentrate the mushroom juices in the pan, you are left with more flavor in the end.
Q: Did you clean the mushrooms?
A: Yes, they were wiped with a damp paper towel before filming. I don't recommend that you wash them or soak them in water, as they will absorb water and will take longer to cook.
Q: Why did you add olive oil at the beginning?
A: Oil conducts heat, which heats up the mushrooms faster, and gets them to let go of their water faster.
Q: Why didn't you use butter?
A: Because butter has milk solids that can burn. So you would only add butter at the very end.
Q: Will adding salt at the beginning help the water come out faster?
A: Not really. What will get the water out of the mushrooms quickly is heat, not salt.
Q: Should I peel the mushrooms first?
A: These are baby Portobello mushrooms, you do not need to peel them.
Q: Is it OK to eat the stem?
A: Yes. You would only remove the stem if it's too tough or has too much tough fiber, which these did not.
Q: What kind of pan is that?
A: It's a non-stick Korean wok that I bought at a local Asian grocery store.
I never wash mushrooms, just wipe them.

ОтветитьForgive me if this is a silly question to y'all... But, why can't one just pour the water out/use a strainer, to get the water out instead of 'evaporating' it? Wouldn't that be much faster?
ОтветитьI like to remove the water by tilting the pan and using a papertowel or two to instantly remove the water to help stage 2.

ОтветитьI tried this for the first time! I used baby 'bella mushrooms, and avocado oil. Maybe I'll try olive oil next time. The reason I didn't: olive oil, so I thought, is a low-temperature oil. No matter. I tried to match your stages; stage three LOOKED incomplete, but it was actually satisfactory, in fact, perhaps OVERcooked a bit(!) I added salt & pepper, took the pan off the heat, then added garlic (you don't want to overcook garlic, as the allicin potential is lost) and red wine. The pan was still hot, off the stove, with sizzle. I'll try different mushrooms with olive oil next time! 👍

The best way to do mushrooms
Is to pull the stems out,
Place the caps upside down on a hot plate or the stove, along with the stems beside them,
Heat until you see fluid building up in the caps, remove the caps containing the fluid
Use a little salt sprinkled over the caps when on the stove and enjoy
This is getting the full taste and benefit of mushrooms

ОтветитьAlternatively, don’t clean your mushrooms in water. Use a small brush to get rid of any dirt. Or peel them.

Ответить"Fry" or sauté? There is a difference. You can just pour off the water, instead of boiling the mushrooms to death. Then, sauté them in butter with garlic, salt and pepper.

ОтветитьGreat video, I’ve actually cooked mushrooms in a very similar way for many years and all my house guests love them. I naturally add butter in the end to finish. However I also season early and note your comment about black pepper burns, next time I will add late in the cooking. Thanks for the advice

I'm not a fan of mushrooms but recently I fried fresh mushroom's and they were good. Would you suggest growing mushroom's over freezing them for using in stir fry ?
