One-Pot Kinoko Pasta

Japanese mum's favorite dish to cook

【Ingredients】
Shimeji 1 pack
Maitake 1 pack
Hiratake 1 pack
(I used 3 types of assorted mushroom, you can also substitute for your preferred types of mushrooms)
Streaky bacon 3-5 strips
Garlic 3 cloves
Spaghetti 80-100 g
Olive oil 1 1/2 tbsp
Water 300 ml
White dashi 50 ml
Sake 50 ml
Butter 10 g
Shredded seaweed (garnish) 1 handful

【Steps】
1. Mince the garlic cloves.
2. Break the mushrooms.
3. Cut bacons into bite size pieces.
4. In a saucepan, add the bacon pieces while the pan is cold and fry over medium heat until the bacons crisp and fat rendered.
5. Add olive oil to the pan and fry the minced garlic until fragrant.
6. Add the mushrooms to the pan and briefly stir-fry.
7. Add water, sake and white dashi to the pan. Put the spaghetti into the pan, cover with lid and turn to high heat until the pot boils.
8. Continue to cook the spaghetti until 2 minutes less than package cooking instruction, open the lid and continue to reduce water until to your preferred softness. Pay close attention to the amount of water in the pot, add more water to the pan if needed.
9. When the pasta is cooked slightly harder than your preferred softness, stir in the butter and give a good mix before plating.
10. Plate the pasta and garnish with shredded seaweed.
