Not so long ago, I came across this Tik Tok profile called Sad Papi. I was checking out his recipes and one of them that I really liked was the Pasta Carbonara. In todays video, I will show you how to make Creamy Pasta Carbonara, inspired by Sad Papi.
Here are some Tips and Tricks:
• Always use fresh cheese. Using pre shredded cheese will ruin the recipe. Pre shredded cheese has already lost the moisture which will make the pasta very dry.
• Do not cook the pancetta on high heat. Using low heat will help reduce the fat so that the dish doesnt become overwhelming.
• Make sure to lower the heat when you add the egg+cheese mixture. We want the eggs to cook slowly.
• Use pasta water instead of regular water. It will add more flavor to the carbonara.
Little Known Facts about Pasta Carbonara:
• It is said that with the arrival of English and American troops on the line between Lazio, Molise and Campania in 1944, the pasta alla carbonara was invented. Soldiers used the ingredients they could find more quickly to make pasta (the eggs and canned bacon they had brought with them)
• The famous dish is said to have taken its name from the Apennine woodcutters who gathered wood to make charcoal. Using the readily available and preserved ingredients, guanciale and eggs, they cooked pasta allá carbonara.
• As ingredients for the delicacy and sweetness of the flavor and pecorino, the official recipe provides guanciale because it was the ingredient they created that was easily stored and available. Parmesan cheese, or a combination of parmesan and pecorino cheese that makes the dish less salty, is still used today. In any event, the original recipe allows for the use of Abruzzo pecorino because it is less salty than the Roman one and because it derives from the traditional "cacio e ova" where the basic ingredient was pecorino.
• While the real recipe is to use the guanciale solely for its consistency, many people opt for the use of pancetta that is smoked. This preference is caused not only by the economic factor (because pancetta costs less) but also because it is less fat and it is also easier to find a particular cut of meat.

• Parmesan Cheese
• Pecorino Romano Cheese
• 2 Eggs
• Black Pepper
• 4 oz. Pancetta
