next time you stuff anything, put the whole casing over the stuffing horn, and let the meat push the casing off the stuffing horn. that will help with the air bubbles in the casings, which make the, in this case, the summer sausage look more like the duck you did instead of the goose.

You can’t get something like that at Walmart near me.
