How to use a trimpot trimmer potentiometer as a variable resistor DIY electronics demonstration

How can i wire on point to point circuit?

Do they make trim pots that only change the resistance very little? I want to vary the feedback gain resistor on an op amp from say 1.8k to 1.7k or 1.9k in little increments.
