She did not have a crock pot but I do and I look forward to making beans in it now that I have this recipe you shared with us. The supper looks so lovely and nourishing. I would like to let you know that I am very appreciative for these delightful and money saving meals you put together. Thank you for all the trouble you go to to share and present great food all the time, but these frugal meals remind this viewer of my wonderful loving mother. she fed ten of us, including the adults on one income and her meals were just delicious. Thank you very much.

ОтветитьJust an FYI, when using the fast soak method, after boiling for 2 minutes and soaking for an hour, then draining, you then cover with fresh water and boil for 30 minutes. The beans are now ready for cooking or canning. You can use that cooking water or fresh or broth (per NCHFP).
ОтветитьPam, are white kidney beans/cannellini beans the same as red kidney beans regarding lectins? My son is so sensitive to lectins and he breaks out with eczema.
ОтветитьI love beans and rice but I do use red beans. I soak overnight with lots of water and a tbsp of baking soda. For some reason the baking soda eliminates all that GI distress (gas) that can be so troublesome

ОтветитьI'm glad you are up front about the mice. They live everywhere. Doesn't matter how fancy or humble a house you live in, they find their way in. Not sure if I commented about this before, but I use a couple of water traps to catch mice outdoors. One just behind the house, one in the shed. I leave them out all year, just let the water freeze in the winter, no big deal. They work well. They're free (I made mine from recycled materials I had on hand). I pour a couple inches of rainwater into each one, and bait them with old nut butters. Occasionally, along with mice, I get a chipmunk or two, if I'm lucky (they eat my tomatoes)! I would caution anyone who is battling mice, they like chocolate, so keep that in a metal container, or you'll wind up using it to bait your mousetraps after they've spoiled it. As an aside, I just watched a yt on the nighthawkinlight channel about waterproofing cardboard. I wonder if you could adapt it to your needs. It's fun just to watch the science demo, but also very economical.

I know you've recently done a clean out of your plastics because you've been convinced that they were not great for your health, so I thought I would mention that the pot you were using for cooking your rice has a coating on it that isn't great for our bodies. I think pfas chemicals or similar. Might be worth researching.

I hope that you have had the opportunity to try MAYOCABA white Beans made by VERDE VALLE.
Many grocery stores sell in the International food Aisle. If not, Amazon and or Walmart sell online.
They are the creamiest and mild tasting bean, that make a beautiful broth as well. USE AMPLE WATER WHILE SLOW COOKING.
I cook on the stove top * presoak over nite. They triple in size when fully cooked.
I do add a several Bay leaves and salt, and a large Onion.
THE AROMA IN THE HOUSE IS WONDERFUL!
They freeze very well too.

ОтветитьPeanut butter or chocolate poison bait. Comes in a gallon size bucket, and will take care of even rats. Blocks look like large baking chocolate, safe around humans and pets.

ОтветитьPam and Jim: When baiting mouse traps with cheese, put the cheese on the trap trigger and let it get hard so they have to work to get it off triggering the trap. I have used peanut butter on mouse traps as well. I once had a small mouse in my living room and we tried everything to trap the silly little bugger it seem nothing would cause it to go for the baited trap. So I melted a chocolate chip and smeared it onto the trigger of the trap and let it harden. Within a day the mouse was trapped. My husband laughed and said what you had was a gourmet mouse on your hands and I was just using the wrong bait. Pam you should do the same soaking technique for your rice to remove the toxins it has in it. I hope the cabin is up to snuff soon so you and Jim can just enjoy your visits to the cabin.
