I understand this food was born out of necessity, but the flavor combinations blow my mind. Like none of this even sounds remotely appetizing, and that’s not even from a recency standpoint. Who mixes lime jello with seafood, onion, and cottage cheese? it doesnt even sound real

Lime jello with cottage cheese is actually really good. The lettuce, onion and seafood salad is weird.

Makes me think of the cooked meats in aspic… I will never understand the need to put a cooked meat in a horrifically under-flavoured ‘jelly’ when you’re not doing it solely for the purpose of preserving it. It’s something that should be consigned to the desperation of the ‘war years’…🤢🤢🤢🤢

This is very much in the spirit of James Lileks’s’ hilarious book, The Gallery of Regrettable Food. His comments on each of the culinary horrors are laugh out loud funny. Highly recommend it.

This was the era where gelatin ceased to be some untouchable industrial thing and became available in little instant boxes at home. So everyone jellied everything. It was much like the 'bacon makes everything better' era or that molecular gastronomy silliness where they were turning everything into deconstructed foam. The jellying also preserved food and acted as a filler.
