I’ve been on the “ whole wheat wrap” meals weekly! ….veggies really fine skinny or grated, I marinate tofu fingers in toasted sesame oil and soya sauce then sautee, warmed tortilla with hummus Smeared on…fold …eat…drips…have a cloth near…♥️
Parsnips are great french fries. I prefer them airfryered witg a little bit of olive oil. And they are delicious in soups instead of celery root

ОтветитьSometimes brokkoli is just sold out. I know the pain. I love brokkoli, my partner loves cauliflower. So either he gets lucky or I do.
ОтветитьI love parsnip! It works well in soups, and I had it yesterday in a vegan curry. It takes a bit longer to make, but it freezes well and is super filling and creamy! The recipe is quite simple: dice an onion and fry it, then add parsnip, carrots, white beans (pre-cooked), garlic, cumin, turmeric and paprika powder (the official recipe has amounts added but I'd say veggies+beans depending on how hungry you are/how much portions you're making and spices all to taste). Fry all that together for a few minutes, then add (light) coconut milk (around 400-500ml for two portions), some water if needed (if the coconut milk isn't enough to cover all the veggies) and a vegetable bouillon cube. Bring to a boil and then let simmer for about 25 minutes (until the veggies are fully cooked and the curry has the required thickness). It's good with naan or pita, but might not be necessary as it is quite filling on its own. If you (or anyone reading this comment) decides to make this, hope you enjoy!
ОтветитьParsnips make a fantastic soup - either in addition to other vegetables like carrot or just on their own. Often you find them cheap because not a lot of people know or like them.
