ОтветитьOmg I tried your curry recipe and it isoooo good ,I didn’t have the curry you had so I used madras curry ,I took a little out of my dehydrated mix ,made up the spice you said put it in a lil bowl scooped half of it out and boiled up enough water just to cover put on stove in pot boiled the water out of it added spices omg it was so good I could only give my husband one spoonful ,but I’m the curry person in our house and I love curry anyway ,I will make him some when we go camping he really liked it too,I was just testing it and it gets a big 10/10 from me ,I just hope it stores well I also haven’t got the chicken so I’m definitely going to try it with chicken and it’s also yummy without great extra staple to have dehydrated!!

If folks are going to use 150F temp, that's going to preclude a LOT of the dehydrators out there. I have found if you can get 130F on your machine, you are fine.
I think there's a bit too much fuss about removing the grease from meat. Keep in mind, the fats are where the flavor is. I have found that the rinsing in hot water process is not worth it. Just get a low fat lean burger mix, use a paper towel in the frying pan to get any fat you do see... and call it good. And lastly, go ahead and season the meat with salt and pepper when you're browning it. The seasoning will bind with the fats and "soak into" the meat. It's a pretty different taste sensation when you just add salt to a dried mix instead of salting the meat.
I have made meals where the ingredients, like beef or turkey, vegetables, pasta, whatever... are all dehydrated first and then mixed when dry. There's some logic to this, but I have found that the meals taste better when all the flavors and textures bond together during a normal cooking process. You like how the meal tastes when you cook it? Good. That's what you got. However, big chunks of food won't work... and you should definitely add more spices than you normally would because dehydrating will "kill" some of the flavors.

Ответить155 degrees! That's cooking temperature, I thought you wanted to dehydrate the meat, not cook it. Oh you mean 68 degrees Celsius not 311 degrees Fahrenheit (which is what 155 degrees Celsius is). Now I understand. The rest of planet Earth (ie not the US) doesn't understand nor do they ever use Fahrenheit.

Since fat is not desirable for dehydration is it ok to sauté onion with a little EVOO? Or something else or nothing? Really want to try this!

ОтветитьThese are great recipe ideas, I'm definitely going to try them! One thing I want to mention is, when I used to brown my ground beef in a skillet before dehydrating, I was not very impressed with how poorly it re-hydrates. There is something about caramelizing the meat that prevents it from returning to the same tender texture it had prior to dehydration. Now I boil my ground beef in a stockpot full of water, rinse it with hot water, pat it dry, then dehydrate it. This method gives you dehydrated ground beef that re-hydrates more readily back to that softer texture.

ОтветитьI'm a single household so every ounce of food needs to be used. If I make a roast or something similar I either have to freeze it or eat it for days. Dehydrating is my option. Please share more details about using the soup (dairy?) Or coconut milk (oil). I don't want to risk anything getting rancid. Thanks for the help!!

ОтветитьDO NOT rinse your ground beef off in your sink. Putting all that grease down the drain can clog you pipes pretty badly. Just pat off with paper towels.

ОтветитьMost vacuum bags are capable of boil-in-bag, so you can literally just pour the water into the bag, then set aside. Especially if you have a bag cozy made of Mylar bubble wrap insulation.

She chopped and drhydrated and then put it in a jar and then said you have to turn the jar over every day for a week to check for any moisture or mold. I was wondering if you have to do that with these meals too?? I would love to have these meals all prepped for days I dont feel well enough to cook
